INC QV ovens have three cooking decks, each capable of baking 3-4 pizzas or 8-12 kg of bread, allowing large quantities of food to be handled with ease. The spacious cooking chamber measures 100 cm in depth, 65 cm in width and 45 cm in height, offering all the necessary space.

A major advantage of these ovens is their low wood consumption: only 4 kg is needed to carry out several consecutive firings, guaranteeing considerableenergy efficiency . In addition, removable shelves make cleaning easy and keep food away from ash, embers and wood, preventing contamination.

External structure and materials

The oven is made of steel sheets treated for use at high temperatures and the outer casing is made of electro-galvanised sheet metal painted by oven baking.

The doors are also incredibly strong and robust, with a practical release system for complete closure. In general, the entire structure of this wood-fired oven is very robust thanks to the thickness and quality of the various types of steel used: this particularity leads to it having a high weight in its category: 420 kg.

Ventilation system and refractory floor

The ventilation system is certainly state-of-the-art among those currently fitted in ovens on the market.

The baking chamber, made of special stainless steel, is separated from the combustion chamber by a double layer consisting of:

This allows even heat distribution over the entire oven surface and avoids the formation of zones at different temperatures, which are detrimental to even baking.

The vast majority of wood-fired ovens on the market today are equipped with the ventilation motor at the bottom of the chamber, with direct air emission from the rear of the chamber.

Ventilation is channelled not only laterally but also underneath the refractory slab.

Cooking chamber - removable side walls

The central body of the kiln, consisting of the combustion chamber and firing chamber, is insulated with a thick layer of rock wool, which allows the temperature inside the chamber to be kept constant, preventing excessive heating of the outer kiln sheets.

This would undoubtedly cause a lowering of the thermal efficiency with a consequent increase in wood consumption.

SMOKE VALVE AIR REGULATION: When the air register is closed, there is still a guaranteed flow of air passing through the lower part of the door. The same thing happens with the flue gas valve in closed mode, where a flue gas outlet flow is guaranteed to prevent stagnation and a build-up of CO2.
