The Calory Forni CF62M Pro electric pizza oven is the ideal choice for those who want a versatile and reliable oven for the preparation of true and contemporary Neapolitan pizzas . This furnace, designed and manufactured entirely in Italy, offers precise temperature control thanks to two independent mechanical thermostats , which allow the heat of the sky and the audience to be regulated separately up to 480°C.

The stainless steel structure guarantees a long life and resistance to wear, while the cooking chamber, with internal dimensions of 41x36x11 cm, is designed to accommodate large format pizzas, such as the 36 cm 'wagon wheel' . In addition, the CF62M Pro includes a 1.4-inch cordierite stone and baking biscuit, ideal for optimal baking by gradually releasing the heat, ensuring a perfectly cooked pizza. The careful design, tempered glass door and internal light allow continuous monitoring of cooking, making this oven an essential addition for anyone aspiring to professional results in their kitchen.

Details

The cooking chamber, thanks to its height of 11 cm, facilitates the movement of the shovel and offers enough space for cooking high-ledge pizzas, without the higher resistance interfering with the process. The furnace also features advanced thermal insulation , obtained through the use of ceramic fiber , which preserves the heat inside and keeps the temperature constant, reducing heating times and optimizing energy consumption. The oven reaches a temperature of 480 degrees (500 degrees on stone) in about 25/30 minutes.

The door, designed without gasket, allows a slight vapor outflow, ideal for highly hydrated dough, which stays dry and well cooked.
